Who doesn’t love a huge Greek Salad with crisp romaine lettuce, garden peppers and tomatoes, briny Kalamata olives, and creamy Feta cheese? Once I learned that I could buy dolmas at the supermarket, my whole world changed! I no longer have to rely on my local Greek restaurant and now make Greek Salads at home. This Greek Salad Recipe makes about 2 cups of dressing, which will generously dress 8 Greek Salads.

Ingredients

  • 1/4 cup lemon juice

  • 1/4 cup red wine vinegar

  • 1 tbsp capers

  • 1-2 garlic cloves

  • 1 tbsp honey

  • 1/4 cup Extra Virgin olive oil

  • 1 1/4 cups grapeseed oil

  • 3/4 tsp dried oregano

  • 1/2 tsp black pepper

  • 1 tsp Kosher salt

Directions

  • In a blender or using carafe and immersion blender, blend first 5 ingredients until smooth. With blender running, drizzle in grapeseed oil, then olive oil. Stir in oregano, pepper, and salt.
