servingsWho doesn’t love a huge Greek Salad with crisp romaine lettuce, garden peppers and tomatoes, briny Kalamata olives, and creamy Feta cheese? Once I learned that I could buy dolmas at the supermarket, my whole world changed! I no longer have to rely on my local Greek restaurant and now make Greek Salads at home. This Greek Salad Recipe makes about 2 cups of dressing, which will generously dress 8 Greek Salads.
Ingredients
1/4 cup lemon juice
1/4 cup red wine vinegar
1 tbsp capers
1-2 garlic cloves
1 tbsp honey
1 1/4 cups neutral flavored oil such as avocado or grapeseed
1/4 cup extra virgin olive oil
3/4 tsp dried oregano
1/2 tsp black pepper
1 tsp Kosher salt
Directions
- Using a top loading blender, or an immersion blender and carafe, blend together the lemon juice, red wine vinegar, capers, garlic and honey until smooth. With the blender motor running, slowly drizzle in the neutral oil, then the olive oil. Stir in the oregano, pepper, and salt.
