• 6 cups day old baguette, cubed
  • 1/2 cup olive oil
  • 1/4 cup grated parmesan (pecorino is excellent too)
  • 3/4 tsp dried basil
  • 3/4 tsp dried oregano
  • 1/2 tsp granulated garlic
  • 1/2 tsp season salt (I like Simply Organic)
  • 1/4 tsp black pepper
  • Kosher salt

Preheat oven to 375 and cover a sheet pan with parchment paper or foil. Toss bread cubes with oil, then add the remaining ingredients except for Kosher salt. Toss bread cubes to distribute seasoning. Spread bread cubes onto prepared pan and bake, using the middle oven rack, for 7 minutes. Remove pan from oven and toss croutons, flipping the brown ones over. Place pan back in oven and stay nearby. They should be done in another 5-6 minutes, but oven temps vary. Remove croutons from oven and taste for seasoning, adding a sprinkle of Kosher salt, if necessary.
