Parmesan Crisps make delicious cocktail snacks or beautiful garnishes. You will need a microplane grater, which grates the cheese into soft ribbons, not the hard granular texture you are used to seeing when you purchase pre-grated cheese. Also, I provide 2 ways of making these crisps. You can make them on the stove top in a non-stick pan OR in the oven using a half sheet pan and parchment paper.
Ingredients
2 cups freshly grated Parmesan cheese, (grated using microplane grater)
Directions
Preheat oven to 400 degrees (F). Line a half sheet pan (18 x 13) with parchment paper. Place 1/2 cup portions of freshly grated Parmesan, evenly spaced, on sheet pan. Cook for about 5 minutes. Cool and remove from sheet pan.
ALTERNATIVELY: Add 1/2 freshly grated Parmesan cheese to a non-stick pan and place over medium heat. Cook for about 3 minutes, then remove using a heat safe spatula. Allow to cool on a heat safe platter or surface.
