What Makes a Great Winter Salad?
Aside from having the dizzying array of amazing winter salad greens (Kale! Brussels Sprouts! Chicories! Oh my!) at our disposal, the best winter salads also include warm and elements like grains and beans, and veggies that are begging to be roasted such as root veggies, cauliflower and gourds. And let us not forget the bounty that is citrus, livening up all those veggies and providing a sharp contrast to all the cozy things we love tossing into our winter salads.
Are Winter Salads Good for Meal Prep?
Oh yes! All but two of these salads are lettuce-free (had to include the iconic Caesar Salad, which to me is an every season salad), which makes them ideal for meal prep.
