Turkey and Avocado Club Salad

minutesThe turkey, bacon, avocado, lettuce, and tomato in this salad are all non-negotiable. However, when I make this salad, I sometimes add hard boiled egg OR cheese. Depends on which one is more readily available. This salad is an open canvas. Add corn if you like! Or croutons! It’s your world!
Ingredients
3 pieces cooked bacon, diced
3 pieces deli turkey, rolled and sliced into 1 inch pieces
1/2 cup sliced cucumber
2/3 cup cherry tomatoes, sliced
4-5 cups chopped Romaine lettuce
1 avocado, peeled, cut in half, and sliced
3 pieces deli Swiss cheese, rolled and sliced into 1 inch pieces (optional- usually if I add cheese, I don’t use eggs, and vice versa)
2 hard boiled eggs, halved (optional- usually if I add eggs, I don’t use cheese and vice versa)
Kosher salt
black pepper (from pepper mill)
- Honey Mustard Dressing
1 1/2 tbsp Dijon mustard
2 1/2 tbsp honey
3 tbsp apple cider vinegar
6 tbsp Extra virgin olive oil
Kosher salt
black pepper (from peppermill)
Directions
- In a large bowl, toss lettuce, tomato, cucumber, and bacon to combine. Add 6 tbsp honey mustard dressing to salad and toss to combine. Season salad with Kosher salt and black pepper, adding more dressing, if desired. Divide salad between 2 plates and top each with half an avocado and half the turkey and cheese. Pass around extra dressing and enjoy immediately.
- Honey Mustard Dressing Directions
- In a small bowl, whisk together honey, mustard, and vinegar. While whisking, drizzle in olive oil. Season to taste with Kosher salt and pepper.
